Yesterday afternoon, we got hit with a snow storm. This NEVER happens in Georgia! I saw snow predicted on my iGoogle weather, but I didn’t believe it until it started coming down. Saturday afternoon, it was 60 degrees. Sunday afternoon, there was a blizzard!!!! I still can’t believe it. Here is a picture from my window this morning:
The best part?? NO SCHOOL!!!! After a leisurely and sleepy morning, my roommates and I cooked up a big lunch.
We cooked some chicken tenderloins in olive oil and sprinkled them with rosemary, thyme, and oregano. 
Cut up an eggplant and salted and sweated it before sauteeing it with some olive oil. We also sauteed some yellow squash, and cooked some Trader Joe’s brown rice noodles.

This is my bowl of noodles with chicken, eggplant, squash, and Bertolli’s organic olive oil, basil, and garlic tomato sauce. Tastes great on a cold afternoon with no classes! Yay!
