I’ve been slacking blogging for the past few days, so today I woke up with a mission to cook some incredibly delicious and blog worthy food!
First thing I did when I woke up this morning was turn on the oven to make some chocolate chip cookies. I’ve been wanting to make this Smitten Kitchen thick chewy oatmeal raisin cookie recipe for a while now, and we had a bag of Ghirardelli chocolate chips that have been begging to be eaten, so I decided to use the Ghirardelli chocolate in Smitten Kitchen’s recipe to make oatmeal chocolate chip cookies…my favorite!

Besides using chocolate chips in place of the raisins, I also subbed whole wheat flour for the white flour and added a handful of dried cranberries.

Even better than the oatmeal chocolate chip cookies was the quesadilla I made for lunch today!! The star ingredient was fresh mango!
I also used some salsa Monterey Jack cheese I discovered at Publix:

And I sauteed some onions, red bell pepper, and spinach:

I also cooked some chicken tenderloins to make the quesadilla more filling and to add some protein, but these would have have been delicious vegetarian (maybe with black beans??).

Maybe I should have called this blog the Avocado Athlete instead of Raspberry Runner…. I eat avocado almost every day, and I actually rarely eat raspberries…..especially when they are $6 for a little container that I could eat in a handful! Maybe you will see more raspberries featured on the blog when they are in season and I can afford them
Anyway, this quesadilla is the best meal I have had in a long time, and it was so quick and easy! Sometimes I forget that I usually like what I cook more than what I can get in a restaurant… Not that I have incredible cooking skills, but I know what I like, and I can cook my favorite foods my way
