Tequila Tuesdays

No tequila for me today, but I couldn’t think of a creative title for this post, and the special at work today was $15 pitchers of margaritas. I greatly amused myself at the hostess stand watching the progression of two girls getting waste-y face off margaritas at 5 PM today, haha. Yes, I spy/eavesdrop on customers all the time when it’s slow…I can’t help myself :) .

My oatmeal this morning was particularly good because I added fresh blueberries while cooking it!

Mmmm…the warm blueberries made this like a big bowl of gooey blueberry muffins :) . After taking the picture, I also stirred a spoonful of cashew butter, which I have decided tastes like cookie dough!

Thanks for all your tips/sympathies on my cashew butter crisis (TJ’s discontinued it!). I’m nervous about trying to make my own because my food processor is a tiny little thing I got from Wal-mart for ten dollars, and while it’s great at mincing onions, I question its ability to turn nuts into nut butter. I’ll let you know how it goes if I try it out….

At lunch today, I was craving vegetables. LOTS of them. So I created this awesome salad:

In my salad:

  • Baby spinach
  • Edamame
  • Tomatoes
  • Red and orange baby bell peppers
  • Sauteed brussels sprouts

In case you were wondering, sauteing is definitely not the best method of cooking brussels sprouts (the leaves fall off and burn, the middle doesn’t get cooked all the way…), but I figured it would give a better flavor than steaming them, and I didn’t have time patience to roast them in the oven.

The dressing I used consisted of olive oil, white wine vinegar, and hummus. Hummus actually works great as a binder in salad dressings. My favorite = hummus + olive oil + balsamic vinegar. I also had a bunch of hummus on the side that I used for dipping :) .

Yesterday, Emily (the health nut) asked me what I wore on Easter in response to my critiques of the fashion at my church. So here is a picture of me and my sibs on Easter right after church:

My dress is from a cool little shop called Pangea in Nashville that my sister and I went to while I was visiting her back in January. This shop had really fun clothes and accessories. Check out the picture my sister look of their jewlery (she is the artist of the family…remember the cupcakes?)

    that salad looks reallllly good… i jsut tried brussel sprouts the other day but they were yucky… i have to try them again but prepare them a different way or soemthing. anywho i love the dress, really cute! Enjoy your night girlie!

I think we should really be blog friends because you are almost an intern and you were pretty easter dresses and you people watch!!!!!!!!(who doesnt, although I can’t lie I did celebrate Margarita Monday a few months back with a couple pitchers(not by myself) and had a major tequila hangover ouchies!
