Maple Protein Pancakes with Pumpkin Cream Cheese

According to Google, pancakes are awesome, healthy, and better than waffles. They are also made out of pancakes (?). Why is Google’s predictive searching so amusing to me? 

Anyway, my sister came home and visited for the weekend and brought home pumpkin cream cheese! Despite the fact that I still wish it was summer, it has been in the 60s in the morning (80s in the afternoon still) and there is pumpkin cream cheese cream in my fridge. This means that it is time for a fall-ish breakfast.

Normal people put cream cheese on bagels, but why limit yourself? Cream cheese is great on lots of foods, including pancakes!

Maple Protein Pancakes (serves 1)

  • 1/3 cup oats
  • 1/3 cup cottage cheese
  • 1/3 cup egg whites
  • 1/2 t baking powder
  • 1 t real maple syrup 
  • lots of cinnamon
  • pinch of salt

You can just mix and spoon on to pan if you want the texture from the oats. I really like it that way, but this time, I decided to blend all the ingredients in my Magic Bullet before cooking. Blending will result in a more  traditional pancake texture.

And then I decided to add almond butter and some Cascadian Farms Maple Granola, too!

YUM.

These pancakes are a great alternative to oatmeal and use pretty much the same ingredients. You just add egg whites, cottage cheese, and baking powder to the oats and cook on a pan instead of in a pot or microwave. Some of you may add egg whites or cottage cheese to you oats anyway. And pancakes are just as fun to add creative toppings to as oatmeal :) .

  1. OOOH scrumptious! Anything with squash or pumpkin (and cinnamon) is a winning fall-themed breakfast.

  2. pumpkin cream cheese sounds amazing! i bet it was amazing on pancakes, too. i’m really excited for all of these fall flavors!

    i just found pumpkin yesterday and bought 6 cans of it! i think pumpkin pancakes are in order tomorrow morning!

  4. I make pancakes pretty much the same way – love them! And everything is certainly better with pumpkin. Today I came up with a little pumpkin protein breakfast cake that was awesome – I blended 1/4 cup eggbeaters, 1/2 scoop vanilla protein powder, 1/2 cup pumpkin puree, truvia, and cinnamon, and poured it into a bowl and microwaved it on high for 2 min. It puffs up and cooks through like a spongy cake. I drizzled it with some melted peanut butter. so good!

  7. pancakes, with no flour?! i only have steel-cut oats, and i’m curious to see if they will work with this recipe too! i’m glad you liked the pumpkin cream cheese… we’ve been buying at least two tubs a week for our apartment…

  8. I agree, pancakes are much more creative than oats. But hey, I’m an oatie! They are simple and I haven’t gotten sick of them yet (less cleanup for sure). These sound great though, and I may have to break out this recipe the next time Nick requests pancakes!!

    I haven’t tried the google predictive search yet….now I want to. I bet it can be pretty funny.

  9. Where in the heck could I get my hands on pumpkin cream cheese? Those pancakes look amazing! Must try them. My favorite fall breakfast-y item is definitely Vermont maple butter. I am salivating just thinking about it! I love to warm it up and put it on a toasted english muffin, although it could go well on those pancakes, too!

    • My sister got it in at a bagel shop in Nashville! I’m sure you can make your own pretty easily by mixing plain cream cheese with pumpkin, spices, and brown sugar :) .
